I faced this dilemma too. So, we have now switched completely to using pure monk fruit extract (available on Amazon) in beverages, and dates in recipes which needs cups and cups of sugar eg: baking. My point is "monk fruit" or its pure extract are safe. It is the erythritol that *may* have ambiguous health repercussions if taken in large quantities.
